Slow Cooker Keto Corned Beef Cabbage is the low carb and paleo-friendly version of the traditional Irish dish.
A low carb and paleo-friendly version of the traditional Irish dish but I made it in the slow cooker and used a healthier, preservative-free, nitrate-free, uncured brand of corned beef.
The meat turned out not as bright pinkish-red as the traditional kind which has a chemical in it (saltpeter, a nitrate) that makes it that color.
This uncured brand did have a tiny amount of natural beet powder to make it sort of a greyish pink color.
However, the taste was amazing and very much like the corned beef I remember. Even my husband said he liked it better than the traditional kind, so that is a win!
I also skipped the potatoes in my original recipe to make it low carb legal.
I bought my Wellshire Uncured Corned Beef at Whole Foods Market and it came pre-seasoned with all the natural spices.

Slow Cooker Keto Corned Beef Cabbage:
Ingredients:
- 3 lb corned beef brisket with spices, Wellshire Farms brand is uncured, preservative free and nitrate free, (I bought this one at Whole Foods)
- ½ large onion, chopped
- 1 large carrot, chopped
- 3 ribs celery stalks, chopped
- ½ head of green cabbage, chopped in quarters
- 4 cups water, or enough to cover brisket
Directions:
- Add corned beef brisket and the spices to a slow cooker.
- Pour 4 cups or enough water over brisket to just cover the whole roast.
- Add onions, carrots and celery. Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
- Add cabbage the last half hour of cooking time, Cover and continue to cook the remaining 30 minutes.
- Remove vegetables and cabbage with a slotted spoon from crockpot to drain excess liquid.
- Remove corned beef and slice against the grain. Serve.
